Here is another one of my easy yuck stir fry. I got a pack of chicken mince. Marinate it with light soy, sesame oil, Chinese rice wine, white pepper & dried basil. Then dice carrots, hard tofu & cut up broccoli to bite size florets. Also place the rice noodles in a bowl & cover with boiling hot water.
In a hot wok, heat some oil, then cook the mince. Once the mince has started to brown, start by adding the carrots, then the tofu & lastly the broccoli. Toss it all together. Run the bowl of noodles under some cold water, drain it & place in the wok & toss with the ingredients. Add some sweet soy sauce to the wok & keep tossing till evenly mixed & ready to serve.
