Stir fry rice vermicelli with eggs, carrots & lettuce

Some days, a vegetarian meal is a great change. I made a stir fry vermicelli for dinner with veggies & egg. 

I start by beating 5 eggs with light soy & ground white pepper. Once it has been beaten, cook it as you would scrambled egg in a hot wok. Once it is cooked, place on a plate or bowl.

In the same Wok, heat some oil & toss in sliced carrots & when softened, shredded cos lettuce. Then add in rice vermicelli & toss with the vegetables. Add in sweet soy sauce, a dash of paprika & a dash of tumeric. Once mixed through, add the eggs back into the wok & toss before serving.
