Some weekends you just know that the work week ahead will be crazy.. in those times, I prep ahead for my lunches so that they can easily be popped into the microwave & be ready to eat rather than having to prepare & put it together.
For one of those weeks, I made a pesto, cherry tomatoes, pearl barley, seeded mustard, spinach, herbs, turmeric & paprika. This was quite easy & in fact, the pearl barley were leftovers from the barley water I boiled for my throat which was rather strained after a super long conference call.
Simply whisk up 6 eggs with 2 cups of milk, mix in turmeric & paprika while whisking, then add in the remaining ingredients.
Then pop it in the oven to bake for 30 minutes on 180 celcius & then let it cook before slicing it & packing.
