Mars bar mudcake with hot chocolate icing

Mars bar mudcake is one of those recipes I tried / experimented with one day & hubs absolutely love it. Almost every year, he’ll request it for his birthday. This year, I made it with a hot chocolate butter icing. 

I start by melting 250grms of butter & 750grms of dark chocolate. This is a double recipe because I am making a cake for almost 30 people! 

Once it is melted, I whisk in 6 eggs, one at a time & vanilla extract. After that, fold in 2 cups of self raising flour. I find it easier to fold in half a cup at a time. Sometimes, the mixture may be too thick so I leave out the remainder or add some milk but note that the mixture is meant to be gluggy. 

Then in to the cake pan it goes & add in chopped up mars bars. I freeze them overnight before making the cake as it is easier to chop off.

I also throw in a handful of chocolate chips scattered around the mars bars 😬 yes, this is a very chocolate cake. 

Bake for 40 minutes at 180 degrees celcius. Check it at about 30 minutes as if the cake is thinner (depending on the size of your cake tin) it may burn on top. 

Then let the cake sit & cool overnight. 

For the hot plate butter icing, use 100grms of soften butter, 2 cups of icing sugar & 4 tablespoons of hot chocolate powder. Whisk together & ice the cake when cooled. Then leave it in the fridge to set until ready to serve.
