Hitsumabushi from Torii Restaurant & Bar

This is the signature dish from Torii & Chef Masa’s special recommendation. A definite must try which not only taste good but comes with theatrics as well! This is a dish that is served twice & feeds more than one. 

The rice, prawn, scallop, eel, seaweed & fish roe are served in a hot stone bowl with a side of poached egg, broth, wasabi, plum sauce & scallions. 

The next step is to thoroughly mix it through to cook everything giving you a serving of crunchy & tasty fried rice.

While you enjoy the first serving, the waiter/waitress prepares stage 2 by adding the egg & broth & mixing once again. It is then left till you have finished your first serving. 

This second serving is like a risotto to which you can add the plum sauce & wasabi if you wish.
