Bread & butter muffins


For ease of dividing, freezing & snacking on, I decided to make individual servings of bread & butter pudding in muffin cups. 

I basically tore up the bread into a bowl and tossed it with some sultanas. Then melt some butter and pour it over the bread & sultanas. Ensure it is well mixed. In a separate bowl, beat together milk, eggs, sugar & vanilla essence and pour over the bread, sultana & butter. Allow it to sit & soak for about 5-10 minutes. If it is too dry, add some milk. 

Once the bread has soaked up all the wet mixture, divide it into the muffin cups / trays & place in the oven till golden brown. Then it is ready to serve or keep in the fridge for the next few days or frozen in the freezer for later.
