Tried a different recipe for my baked ham this time. This was simple & easy once again. I removed the rind, scored the fat below it, rub in quite a fair amount of salt to make the crackling & some pepper, then smother it with honey.
Around it I placed roughly chopped pumpkin, carrots & for a trial, wedges of cabbage drizzled with olive oil.
Cover with foil & place into the oven to bake for about an hour. Then, remove the foil, drizzle more honey on the ham & bake for another 10 minutes & then grill for a further 10 minutes.
It was a hit & the cabbage was so good as well! It also makes amazing leftovers either as a warm salad tossed with cous cous (which I cooked using the ample amount of juice from the vege) or in a sandwich.
