Baked brown sugar Dijon mustard ham with roasted potato, pumpkin & carrots

This may sound fancy but in fact it is a very simple meal to make. Get a cut of smoked ham, remove the rind, leaving a thin layer of fat, score the fat & spread generously with Dijon mustard & cover with a few heaps of brown sugar. Then place in oven for 30 to 40 minutes to bake. 

In a separate tray, cut up pumpkin, potatoes & carrots, toss with olive oil, a few slices of garlic & dried herbs. Place in the oven together with the ham. 

Relax & once it is ready, dinner is served.
