Pan fried diced potatoes, pumpkin & broccoli topped with Parmesan and egg


I was having one of those nights when I didn’t know what to make for dinner so I put a pan with some water into it & started dicing a potato into cubes & placed it in to cook. Then I did the same with a wedge of pumpkin & also a broccoli. By now, the water has pretty much dried up & the potato & pumpkin had softened. I drizzle in some coconut oil & some dried herbs & pan fry the vege. Then sprinkle some Parmesan cheese over it & cracked 2 eggs over the top & place the whole pan in the oven for about 5 minutes to melt the cheese, cook the egg & crisp the top of the vege. Once it is out, it is ready to serve.. It tasted amazing!
