Soy noodles with steamed fish & topped with fried egg

This was another late night & quick creation for dinner. Firstly, I placed 2 pieces of frozen fish drizzled with Chinese rice wine & light soy sauce & place straight in the oven for about half an hour. 

While that is cooking, boil a pot of water, when boiled, cook the noodles which cooks really quickly. While the water is boiling, fry an egg for each serving. 

Once noodles are cooked, toss with sweet soy, sesame oil & oyster sauce. Then top with a slice of fish & an egg. Drizzle some sauce which would have been created from the light soy, Chinese rice wine & water from the fish & it is ready to serve. So good plus no oil used to cook this meal.
