Casseroles of pumpkin, mushroom & ham baked eggs

  
Easy & simple yet tasty.. Great for a weekend. I had leftover ingredients all cut up from meals throughout the week so this was created. In a pan, cool up some sliced pumpkin, ham & mushroom, then place on a casserole or little casseroles (or ramekins) to make individual serves like I did here. Crack an egg (I used 2 here) over it, season with some salt & pepper & place in oven on low to bake for approximately 10 minutes. Comes out beautifully with the yolk still runny! Absolutely amazing!
