One of the best thing about home cooking is that nothing goes to waste. I used the chicken meat from the chicken frame that was in my herbal soup (see previous post) which is now full of flavour having been infused in the herbal soup to make this congee. There is actually quite a lot of meat on the chicken frame & if it was just tossed out, it would go to waste. I managed to get a medium size bowl full of shredded chicken out of the one chicken frame & using some leftover soup, I boil some rice until it becomes soft & turn into a congee. So yummy, so healthy & still packed with nutrients!
