Pumpkin & spinach omelette 

  
This was a quick & easy dinner. Cut up a wedge of pumpkin, pan fry with some coconut oil, defrost some frozen spinach (about 3 cubes) & add to pan. While it is cooking, whisk 3 eggs & some milk, pour over mixture when pumpkin has softened. Leave on stove for a minute or two before transferring to hot oven for 10 minutes. When ready, let it sit for a minute or 2 before serving.
