Mini omelette with ham, grated carrots, diced celery, basil, hommus & tumeric

  
This one was quick & easy to make. I whipped it together while the muffins were in the oven & swapped them when the muffins were done. 

So spray a muffin tray with oil, then roughly chop up some ham, grate a carrot & dice a stalk of celery. Mix & place mixture in equal amounts into each of the holes. 

In a bowl, whisk 6 eggs, a dash of milk (abt half cup), finely chopped basil, 1/3 cup or 2 tablespoons of hommus & 1/2 teaspoon of tumeric. 

Then divide equally over the ham, carrots & celery mixture & bake for 20 minutes.
