One of my dear friends was telling me the other day that she wanted banana muffins & I said I would make her some on the weekend. She started coming down with a cold on the weekend so I decided to experiment & tweak the recipe a little to make it “healthy” for her & giving her the ingredients that will help her fight the cold.
Using my basic banana muffin recipe, I first mash the bananas (about 3-4 depending on sizes) then add in grated fresh ginger & grated rind of a whole lemon. Mix together with a cup of honey (in place of sugar) and about 100 grams of softened butter. Then I add in 2 eggs and a teaspoon of vanilla extract. Then mix in a cup of self raising flour, 2 tablespoons of grounded cinnamon & about 2 teaspoons of grounded cloves. This will add some spice to the muffins but if you are not a fan of spice, then reduce the amount of cinnamon and/or cloves & add more flour in place. Bake till golden brown. Immediately out of the oven, use half a lemon & squeeze some juice over each muffin. Using the other half, mix it with a cup of icing sugar & drizzle icing over each muffin. Doing this while it is hot will allow the lemon juice & icing to be absorbed by the muffin & it will result in a glazed look (& maybe with a few sugar crystals here & there) when cooled.
