Chicken & carrot congee

  
I wasn’t well over the weekend & this is the ultimate sick/comfort food when unwell. Easily made by first heating up a tablespoon of oil to fry up some finely sliced ginger in a pot, then add diced chicken marinated in some salt, pepper & sesame oil, then add chopped carrots & half a cup of rice. To it, add about 4 tablespoons of Chinese rice wine & 2-3 cup of water, bring to a boil & then allow to simmer for about 30-40 minutes & it is ready to eat.
