For the fried rice, you will need some cooked rice. I prefer to use leftover rice from the day or two before as it dries out a little & becomes grainer therefore combing well with the ingredients and avoiding clumps of white rice. Chop up some garlic and fry in some oil till brown, add diced vege as you wish (here I have carrots, brocolli, green beans & peas), cook through and then add the cold rice. Stir through, add a tablespoon of light soy and a dash of white pepper & it is good to serve! Sometimes, if you like, you can add some eggs to it and scramble it with the vege before adding the rice in.
For the ginger sesame oil chicken, heat some vegetable oil, stirfry the cubed chicken & finely julienned ginger till cooked & fragrant. Add 2 tablespoons of light soy, 3 tablespoons of sesame oil & 2 tablespoons of Chinese cooking rice wine and half a cup of water. Bring to a boil and the reduce the heat and allow it to simmer.
