This is always a go to meal on a busy winter day. But also any other day actually. I usually put this in in the morning before heading to work. It is as simple as placing everything into the slow cooker & it is up to you what vegetables you would like to put into it. I tend to use potatoes, pumpkin, zucchini, carrots & celery but have also added spinach, Chinese vegies like Bok choy & so on. Set it to low & let it cook slowly in its juices all day & walk into a house smelling of a heavenly mouth-watering meal when you get home from work. If you are at home or are out for a shorter time period, just set the slow cooker on high instead. The meat & vege will be so tender that it melts in your mouth. The saltiness from the corned beef will mix with the sweetness of the vege giving you a delicious broth that can accompany the meal or be frozen as stock for soup or a pasta dish.
