This is my default dish when I have bits of everything left as pretty much anything can go into it.. I basically chop & cook up sausages, bacon, tomatoes, carrots, celery (& anything else you have). Add rice, stir & mix with what’s in the pan & then add chicken stock. Bring it to a boil, & add two tablespoons of tomato paste & balsamic vinegar. Cook on low till the rice is cooked, stir in spinach leaves & then serve with parmesan cheese.
