It has been one of the hottest summer days for a while (in fact for a long while!) & at times like these are when it is hard to decide on what to eat..
Thankfully, it’s the week after Christmas & New Year which means leftovers are aplenty in the fridge.. So I tossed together some lettuce (leftovers from roast chicken sandwiches for lunch) & ham (a sure Christmas leftover) topped with some thousand island dressing. Then sprinkle some sultanas (you will be surprise the additional taste it adds to a salad) & topped with eggs scrambled with baby peas & baby spinach. Very random but very tasty.. I have to say, I was pleased with the result..
