Red wine sundried tomatoes penne with sausages & baby spinach

A quick dinner that is easy to put together.. Sausages are a versatile ingredient that can be used for a variety of dishes (as long as they are good quality sausages) & they do not cost a fortune.. Chop it up & toss it with some garlic, when slightly browned, add the sundried tomatoes roughly chopped & some tomato paste. Then pour in some red wine & simmer for a few minutes before adding cooked penne.. Toss & then lastly, stir in some fresh baby spinach leaves before turning the heat off. Quick & easy, ready to be enjoyed..

It was a delicious New Year’s Day dinner for us enjoyed with a glass of red (for me) & a cold beer (for hubs) in our backyard.
